Spelling of Ernst Späth's Name

In my book, American Profiles: Black Scientists (ISBN 0-8160-2549-5), Ernst Späth's name is spelled Ernst Spaeth. Which spelling is correct, and if the correct spelling is already on Wikipedia, why did the book spell his name that way?
